Ingredients
- 2 pkg. (10 oz. each) frozen chopped spinach, cooked and drained
- 2 c. cottage cheese
- 1 tsp. salt
- 1/3 c. grated Parmesan cheese
- 2 eggs
- Parmesan cheese
Method
- Make an "X" cut in each package of spinach.
- Place both packages on a plate and microwave on 100% power for 8 to 9 minutes, until thawed.
- (Times may vary, depending on microwave oven size and power.)
- Drain well.
- Mix together spinach, cottage cheese, salt, Parmesan cheese and eggs until well blended.
- Pour into a greased 1 1/2-quart casserole dish.
- Microwave, uncovered, on 100% power for approximately 10 minutes.
- Sprinkle with a little additional Parmesan cheese and serve.
