Ingredients

  • 8 eggs
  • 1 1/2 pd feta cheese
  • Package of phillo dough
  • 1 Tbspn uncooked farina
  • 4-5 packages of chopped spinach (frozen is better), defrosted
  • 1 stick Butter

Method

  • Use a 9x 12 baking dish. Preheat oven to 350 degrees.
  • Melt 1 stick of butter.
  • Brush bottom of dish with melted butter.
  • Drain and squeeze all excess water from spinach. Put spinach in bowl. Add farina and feta and eggs. Mix well.
  • Open Phillo and split package in half. Cover half with damp towel on bottom and on top of dough. Work with other half. For initial bottom layer, put 7 pieces of phillo, brushing EACH piece with butter. Add layer of spinach mixture -using half the amount in bowl. Then add 3 pieces of phillo, again brushing each in between with butter. Add remaining spinach mixture and then top layer of phyo -- 5 sheets, buttering each sheet.
  • Cook for about 50 minutes until golden brown.
