Ingredients

  • 1 (9-inch) pie crust
  • 1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
  • 1 c. shredded Swiss cheese
  • 1/3 c. sliced onion
  • 1/4 c. grated Parmesan cheese
  • 4 eggs, slightly beaten
  • 1 1/4 c. light cream or milk
  • 4 tsp. Worcestershire sauce
  • 1/2 tsp. salt
  • 1/2 tsp. tarragon leaves

Method

  • Prick pie crust with fork.
  • Bake pie crust at 400° for 8 minutes.
  • Layer 1/2 spinach, cheese and onion.
  • Repeat.
  • Combine remaining ingredients; pour over spinach.
  • Bake at 450° for 10 minutes.
  • Reduce oven to 325° and bake until firm, 20 to 25 minutes.
