Ingredients
- 1 pie crust, not baked
- 1 c. Ricotta cheese
- 1 c. shredded Cheddar cheese
- 1 c. cottage cheese
- 1 (8 oz.) pkg. frozen chopped spinach
- 4 large eggs
- pinch of salt and pepper
Method
- Defrost, drain and squeeze chopped spinach.
- Preheat oven to 375°.
- Line deep dish with pie crust.
- Mix beaten eggs, salt, pepper and 3 cheeses with spinach.
- Pour mixture into crust.
- Bake for 45 minutes or until egg is set.
- Cool for 15 minutes.
- Makes 4 to 6 servings.
