Ingredients

  • 2 Tbsp. water
  • 4 Tbsp. olive oil
  • 2 pkgs. frozen chopped spinach
  • 1/4 tsp. each oregano, basil & garlic powder
  • 5 large mushrooms, sliced (optional)
  • 1 - 8 oz. pkg. shredded mozzerella cheese
  • 1- 3 1/2 oz. pkg. sliced pepperoni
  • Bread crumbs
  • parmesan cheese
  • 3 tomatoes, sliced

Method

  • Bring water and olive oil to a boil and add spinach and seasonings.
  • Lower heat and cook until defrosted.
  • Drain.
  • Layer 1/3 of spinach in a one quart casserole dish.
  • Top with 1/3 mozzarella cheese, 1/3 pepperoni, 1/3 mushrooms, and a sprinkling of bread crumbs.
  • Repeat two times.
  • Cover with sliced tomatoes and sprinkle with parmesan cheese.
  • Bake in a 325 degree oven for 20 to 30 minutes.
