Ingredients

  • 2 boxes frozen, chopped spinach, cooked and drained well
  • 2 c. herb bread stuffing mix
  • 2 medium onions, diced
  • 1/2 c. chopped celery or water chestnuts
  • 6 eggs, beaten
  • 3/4 c. margarine, melted
  • 1/2 c. Parmesan cheese
  • 1 Tbsp. garlic salt
  • 1/2 tsp. thyme
  • 1 tsp. pepper
  • Tabasco sauce (several dashes)

Method

  • Drain cooked spinach well and mix with all other ingredients. Shape into balls.
  • Bake 20 minutes at 350°.
  • Can be frozen before baking to use later.
  • Makes 60 to 70 balls.
