Ingredients

  • 1 cup brown rice flour
  • 1/2 cup spinach diced, fresh or blanched and frozen
  • rice flakes for decoration
  • 1/3 cup diced bacon pan fried or oven baked preferred plus extra for decoration
  • 1 cup pumpkin mashed, or sweet potato
  • 1/2 cup peanut butter

Method

  • Preheat oven to about 180 degrees Celsius (160 fan forced)
  • Line several baking trays with greaseproof paper
  • Combine all ingredients in a bowl, mixing until completely combined.
  • Roll out tablespoons of mixture into balls and place evenly a few cms apart on a baking tray.
  • Press down with a fork and top with remaining bacon bits or rice flakes.
  • Bake for 12-15 minutes until dry.
  • Turn off oven and let biscuits cool inside with the oven door cracked.
  • Refrigerate after the first day of baking.
