Ingredients

  • 2 tablespoons water
  • 1 12 tablespoons red wine vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 2 teaspoons Dijon mustard
  • 14 teaspoon fresh ground black pepper
  • 1 apple, thinly sliced lengthwise (Gala or Granny Smith)
  • 1 (10 ounce) bag Baby Spinach
  • 1 red onion, thinly sliced
  • 14 lb button mushroom, sliced
  • 2 slices bacon, cooked and crumbled (optional)

Method

  • Combine first 6 ingredients (water through pepper) in a small bowl; whisk together.
  • Place the apple slices in a large bowl.
  • Spoon 1 tbsp dressing over apples, toss to coat.
  • Add spinach, onions, mushrooms, and remaining dressing; toss to coat.
  • Sprinkle the bacon over the top of salad.
