Ingredients

  • 2 large eggs
  • 3 1/2 ounces whole wheat flour
  • 10 ounces spinach, frozen chopped, thawed, drained well
  • 1 pound cottage cheese
  • 6 ounces cheddar cheese reduced fat
  • 1 x black pepper ground

Method

  • Beat the eggs and wholemeal flour together in a large bowl.
  • Add the spinach, cottage cheese, cheddar cheese and black pepper.
  • Spoon the mixture into a well greased large oven proof dish.
  • Bake in the oven at 350F (180C).
  • for about 45 minutes.
  • Leave to cool for at least 5 minutes before serving.
