Ingredients

  • 4 tsp. olive oil
  • 2 cloves garlic, minced
  • 3 medium ripe tomatoes, peeled, cored, seeded and chopped or 1 can (large) low-salt tomatoes, chopped (with juice)
  • 1 tsp. basil (dried), crumbled
  • 2 Tbsp. minced parsley
  • 1/2 tsp. dried oregano, crumbled
  • pinch of cayenne pepper
  • 1/2 c. dry white wine or chicken broth
  • 3 c. water
  • 1/2 lb. cod or haddock, cut into bite size pieces
  • shrimp, cleaned
  • crab meat

Method

  • Heat the olive oil over moderate heat; add the garlic, tomatoes, basil, oregano, cayenne pepper and wine.
  • Cook, uncovered, for 10 minutes. Add the water. Cover and bring to a simmer, about 3 minutes.
  • Mix in the cod and shrimp and cook, uncovered, about 5 minutes longer.
  • Ladle into bowls and add a tablespoon or two of fresh crab meat.
  • Sprinkle with parsley.
