Ingredients
- 3 c. zucchini or yellow summer squash (unpeeled), cut into chunks
- 2 eggs
- 1 1/2 tsp. pumpkin pie spice
- 1 1/3 c. nonfat dry milk
- 1 tsp. vanilla extract
- 1 tsp. baking powder
- 1 Tbsp. all-purpose flour
- 2 Tbsp. plus 2 tsp. sugar or sweetener (equivalent to 8 tsp. sugar)
Method
- Preheat oven to 350°.
- In a blender container, combine all ingredients.
- Blend until smooth.
- Pour mixture into a 9-inch round cake or pie pan that has been sprayed with a nonstick cooking spray.
- Bake 30 minutes until set.
