Ingredients

  • 3 whole Sweet Potatoes, Sliced Thin (about 1/8 In Thick)
  • 1 cup Milk Or Cream
  • 1 whole Egg
  • 1 cup Finely Grated Parmesan Cheese
  • 1 whole Chipotle Pepper
  • 1 dash Salt To Taste
  • 1 dash Pepper To Taste
  • 1-1/2 cup Grated Cheese Of Choice (optional)

Method

  • 1) Preheat oven to 375 degrees F.
  • 2) In a food processor puree cream, egg, parmesan cheese, and chipotle pepper.
  • 3) In a casserole dish, arrange the sweet potatoes in even layers. Drizzle with a few tablespoons of the milky mixture, season with salt and pepper. Repeat with remaining potatoes until all potatoes and cream are gone.
  • 4) Cover with foil and bake for 30 minutes. Remove cover, sprinkle with grated of cheese of choice and bake for another 15 minutes until top is brown and bubbly.
