Ingredients
- 2 lb. red skinned potatoes
- 1/2 c. mayonnaise
- 2/3 c. mild salsa
- 2 Tbsp. spicy brown mustard
- 2 scallions, chopped
- 1 small red pepper, chopped
- shredded carrot
Method
- Boil potatoes until fork-tender.
- Do not peel potatoes. Allow to cool and cut into bite-size pieces.
- Combine mayonnaise, salsa and mustard and toss with potatoes.
- Add scallions, pepper and carrots.
- Chill salad until ready to serve.
