Ingredients

  • 4 boneless,skinless chicken thighs
  • 1 packet spicy peanut bake, both inner envelopes
  • 1 tablespoon canola oil
  • 2 shallots minced
  • 1 cup chicken broth
  • garnish lime wedges, chopped cilantro

Method

  • Preheat oven to 375 degrees.
  • Pound chicken to an even thickness between wax paper.
  • Coat both sides of chicken with spicy peanut bake. Roll up and secure with a tooth pick.
  • In a medium nonstick skillet, heat oil. Brow chicken rolls well on all sides. Place in a size appropriate baking dish.
  • Add chicken broth and shallots to the skillet. Bring to a boil, scraping up the browned bits in the pan. Simmer for 4 minutes or until slightly thickened.
  • Pour over chicken and bake for 30 minutes or until done.
  • Garnish with lime wedges and chopped cilantro.
