Ingredients
- 4 boneless,skinless chicken thighs
- 1 packet spicy peanut bake, both inner envelopes
- 1 tablespoon canola oil
- 2 shallots minced
- 1 cup chicken broth
- garnish lime wedges, chopped cilantro
Method
- Preheat oven to 375 degrees.
- Pound chicken to an even thickness between wax paper.
- Coat both sides of chicken with spicy peanut bake. Roll up and secure with a tooth pick.
- In a medium nonstick skillet, heat oil. Brow chicken rolls well on all sides. Place in a size appropriate baking dish.
- Add chicken broth and shallots to the skillet. Bring to a boil, scraping up the browned bits in the pan. Simmer for 4 minutes or until slightly thickened.
- Pour over chicken and bake for 30 minutes or until done.
- Garnish with lime wedges and chopped cilantro.
