Ingredients
- 1 lg. butternut
- 2 onions
- 1 leek
- Chicken stock
- 1 clove garlic
- 2 tsp. sage
- 1 chili
- Salt and pepper, to taste
- Nutmeg, to taste
- Cinnamon, to taste
Method
- Saute onions, leeks and garlic in olive oil.
- Add butternut and leave on low heat to sweat.
- When butternut is soft add chopped chili and sage.
- Add stock.
- Bring to boil and simmer on low heat.
- Blend.
- Add nutmeg, cinnamon, salt and pepper to taste.
