Ingredients

  • 2 qt. crabapples with stems
  • 3 c. distilled white vingear
  • 3 c. water
  • 6 c. sugar
  • 1 stick cinnamon
  • 1 Tbsp. allspice
  • 1 Tbsp. whole cloves

Method

  • Wash and drain crabapples--do not peel.
  • Pierce peel with a large sterilized needle to prevend bursting.
  • Mix vinegar, water and sugar.
  • Add spice bag.
  • Boil until syrup coats spoon.
  • Add crabapples, reheat slowly to avoid bursting the skin.
  • Simmer until apples are tender.
  • Pack in hot jars.
  • Fill jars with boiling syrup, process 20 minutes in a boiling water bath.
