Ingredients
- 9 medium tomatoes or 1 qt. canned
- 1 (2 1/2 to 3 lb.) fryer, cut up
- 2 Tbsp. all-purpose flour
- 1/4 c. salad oil
- 1 c. fresh chopped onion
- 1 garlic clove, minced
- 3/4 c. water
- 1 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 chicken flavor bouillon cube
- 1 (3-inch long) cinnamon stick
Method
- About 1 hour and 15 minutes before serving, peel, seed and dice 6 tomatoes. Cut 3 tomatoes into wedges; set aside.
- (This is only if using fresh tomatoes.)
- Coat chicken with flour.
