Ingredients

  • 1 whole Head Of Cauliflower
  • 1 Tablespoon Olive Oil
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Turmeric Powder
  • 1/2 Tablespoons Greek Spices
  • 4 stalks Chives, Chopped
  • 1/2 Tablespoons Chili Powder
  • 8 ounces, weight Diced Tomatoes
  • 6 ounces, weight Feta Cheese

Method

  • Preheat oven to 500 degrees F.
  • Grease a jelly roll pan with cooking spray. Spread cauliflower florets onto the pan and sprinkle with olive oil.
  • Mix mustard seeds, tumeric, Greek spices, chopped chives and chili powder together. Sprinkle over the cauliflower.
  • Bake for 15 minutes until cauliflower is soft, but not squishy. Then drain tomatoes and add them to the cauliflower mixture. Crumble feta cheese over the mixture and bake for another 3-4 minutes until cheese is bubbly.
