Ingredients
- 3 Tbsp. oil
- 1 c. uncooked rice
- 3/4 c. chopped onion
- 1/2 c. chopped green pepper
- 1/2 c. chopped celery
- 14 oz. can stewed tomatoes
- 1 c. water
- 1 1/2 tsp. salt
- 1 tsp. chili powder
Method
- Heat 2 tablespoons oil in large skillet; add rice.
- Brown lightly, stirring frequently.
- Add remaining 1 tablespoon oil, onion, green pepper and celery; cook until soft.
- Add remaining ingredients.
- Cover pan tightly.
- Simmer for 20 to 30 minutes.
