Ingredients

  • 1/2 c. shortening
  • 1/4 c. granulated sugar
  • 1 egg yolk, beaten
  • 1 Tbsp. orange rind, grated
  • 1 1/2 tsp. lemon rind, grated
  • 1/2 tsp. vanilla
  • 1 Tbsp. lemon juice
  • 1 c. cake flour, sifted
  • 1 egg white (unbeaten)
  • 3/4 c. nuts, chopped
  • 6 glazed cherries, cut in small pieces

Method

  • Mix shortening, sugar, egg yolk, grated orange, lemon rind, vanilla and lemon juice until light and fluffy.
  • Add flour and beat just long enough to mix.
  • Chill until easy to handle.
  • Form dough into 1/2-inch balls; roll in egg white and then in nuts. Place on greased cookie sheets.
  • Press cherry into top of each cookie.
  • Bake at 350° for approximately 10 minutes.
