Ingredients

  • 1/2 cup chopped green pepper
  • 1/3 cup chopped celery
  • 1/4 cup chopped onion
  • 1 tablespoon canola oil
  • 1 lb fully cooked smoked sausage, sliced
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 (6 7/8 ounce) package Spanish rice, and pasta mix (or homemade -- see below)
  • 1/4 cup sliced pimento stuffed olive
  • 1/8 teaspoon pepper
  • 3/4 cup rice
  • 1 teaspoon salt
  • 1 teaspoon minced onion
  • 1 tablespoon dried tomato powder (or add 1 can diced tomatoes when cooking rice in chicken broth)
  • 1/2 teaspoon chili powder
  • Homemade Spanish Rice
  • 1/2 cup uncooked spaghetti
  • 3/4 cup rice
  • 1 teaspoon salt
  • 1 teaspoon minced onion
  • 1/2 teaspoon chili powder
  • 2 tablespoons butter

Method

  • Saute the green pepper, celery, rice/spaghetti and onion in butter until the veggies are tender.
  • Stir in the remaining ingredients. Cover and simmer for 15-20 minutes or until rice is tender and liquid is absorbed, stirring occasionally.
