Ingredients

  • 4 Tbsp. bacon drippings or butter
  • 1 1/2 c. long grain rice
  • 4 strips green pepper
  • 2 Tbsp. chopped onion
  • 1/2 tsp. ground cumin
  • 3 c. water or chicken broth
  • 3 garlic cloves, crushed
  • 2 Tbsp. chili powder
  • salt to taste
  • 1 small can peeled tomatoes, cut up

Method

  • Brown rice, green pepper and onions in bacon drippings. Remove from heat. Set aside to cool a bit. Add all remaining ingredients. Pour in water or broth, stirring slowly. Bring to a boil. Lower heat immediately; cover, leaving lid open a tiny bit. Cook 15-20 minutes or until rice is tender.
