Ingredients
- 1 broiler-fryer chicken, cut into serving pieces
- 2 Tbsp. corn oil
- 1 c. chopped onion
- 1 green pepper, cut in rings
- 1 c. raw rice
- 2 cans (8 oz. each) tomato sauce with mushrooms
- 1 3/4 c. water
- 1 tsp. salt
- 1 tsp. chili powder
- 1/4 tsp. pepper
Method
- Brown chicken in oil in a skillet.
- Add onion, pepper and rice.
- Cook lightly.
- Stir in remaining ingredients; cover and simmer 40 minutes.
- Serves 4.
