Ingredients

  • 34-1 lb lean ground buffalo (bison)
  • 1 cup prepared refried beans
  • 12 cup chopped fresh cilantro or 1 tablespoon dried cilantro
  • 12 teaspoon taco seasoning
  • 1 tablespoon chopped pickled jalapeno pepper
  • 1 avocado, peeled and pitted
  • 12 cup prepared salsa (mild, medium or hot)
  • 1 garlic clove, pressed
  • 4 whole-grain tortillas (warmed)
  • 2 cups shredded romaine lettuce
  • 12 cup shredded reduced-fat monterey jack pepper cheese
  • 1 lime, cut into 4 wedges

Method

  • Position oven rack in upper third of oven; preheat broiler.
  • Coat a broiler pan with cooking spray.
  • Gently combine ground buffalo, beans, cilantro, taco seasoning and jalapenos in a medium bowl (do not over-mix).
  • Shape into four 5x2-inch oblong patties and place on the prepared broiler pan.
  • Broil the patties until an instant-read thermometer inserted into the center reads 165F, about 12 to 14 minutes.
  • Meanwhile, mash together avocado, salsa and garlic in a small bowl.
  • Place warmed tortillas on a clean work surface.
  • Spread each with the guacamole mix, then sprinkle with lettuce and cheese.
  • Top each with a burger and roll into a wrap.
  • Serve immediately, with lime wedges.
  • TO WARM TORTILLAS:.
  • Wrap in foil; bake at 300F until steaming, about 5 minutes.
  • Or wrap in barely damp paper towels and microwave on HIGH for 30 to 45 seconds.
