Ingredients

  • 2 1/2 to 3 lb. ground beef
  • 2 c. chopped onion
  • 1 green pepper, chopped
  • 3 cloves garlic, pressed, or 3 shakes of garlic powder
  • 1 to 2 Tbsp. crushed red pepper
  • 3 Tbsp. chili powder
  • 2 (1 lb.) cans red kidney beans (undrained)
  • 2 cans whole peeled tomatoes
  • 1 (8 oz.) can tomato sauce
  • 2 tsp. cumin
  • 1/2 tsp. oregano
  • 2 1/2 tsp. salt
  • 1 (12 oz.) can kernel corn

Method

  • Brown ground beef and pour off fat.
  • Add onion, green pepper, garlic, red pepper, chili powder, cumin, oregano and salt.
  • Mix well.
  • Cook until onion and green pepper become tender.
  • Add beans, tomatoes, corn and tomato sauce.
  • Stir to mix well, breaking up tomatoes with a fork.
  • Simmer slowly, stirring occasionally, until thickened and blended (about 45 minutes).
