Ingredients
- 1 lb. kidney beans
- 1 large bell pepper
- 1 large onion
- 1/2 clove garlic
- 1 stick butter or margarine
- 1/2 lb. bacon
- 1 medium pkg. pig tails
- 1 tsp. salt
- 1 tsp. pepper
Method
- Let beans soak for more tender beans and then bring a large boiler of water to a boil.
- Pour beans in boiling water.
- Turn heat to medium and let cook about an hour.
- Chop seasonings very fine, and salt and pepper to your taste.
- Boil pig tails at same time until you put the beans on.
- Cook pig tails until tender. Fry bacon.
- Pour 1/2 grease from bacon into the cooking beans; add pig tails and one stick of butter or margarine.
- Cook another hour on low.
