Ingredients

  • 1 lb. kidney beans
  • 1 large bell pepper
  • 1 large onion
  • 1/2 clove garlic
  • 1 stick butter or margarine
  • 1/2 lb. bacon
  • 1 medium pkg. pig tails
  • 1 tsp. salt
  • 1 tsp. pepper

Method

  • Let beans soak for more tender beans and then bring a large boiler of water to a boil.
  • Pour beans in boiling water.
  • Turn heat to medium and let cook about an hour.
  • Chop seasonings very fine, and salt and pepper to your taste.
  • Boil pig tails at same time until you put the beans on.
  • Cook pig tails until tender. Fry bacon.
  • Pour 1/2 grease from bacon into the cooking beans; add pig tails and one stick of butter or margarine.
  • Cook another hour on low.
