Ingredients

  • 1 lg. onion, peeled, diced fine
  • 1/2 pound bacon, finely diced
  • 1 quart. chicken broth or possibly stock
  • 1/2 pound chicken meat, cooked, julienne
  • 1/2 c. sweet potato balls (pea size)
  • 2 tbsp. parsley, minced

Method

  • In a 4-qt soup pot, cook diced bacon till crisp.
  • Add in onion and cook till onion is tender.
  • Add in chicken stock and sweet potato balls; bring to a boil, then reduce heat to simmer and cook till sweet potatoes are done.
  • Add in julienned chicken meat and serve warm.
  • Garnish with minced parsley.
  • Serves: 4-6.
