Ingredients

  • 3 Tbsp. butter
  • 3 large onions, thinly sliced
  • 1 Tbsp. flour
  • 1/2 tsp. salt
  • fresh ground pepper
  • 3 c. beef broth
  • 2 c. white wine
  • 4 thick slices French bread
  • 4 Tbsp. grated Parmesan cheese
  • 4 Tbsp. grated Swiss cheese

Method

  • In heavy pot, melt butter.
  • Add onions and cook slowly, stirring occasionally, until golden.
  • Sprinkle on the flour and stir for a few minutes, seasoning with salt and pepper.
  • Add broth and wine, stirring constantly.
  • Bring to a boil.
  • Lower the heat and let the soup simmer for 30 minutes, partly covered.
