- 3 Tbsp. butter
- 3 large onions, thinly sliced
- 1 Tbsp. flour
- 1/2 tsp. salt
- fresh ground pepper
- 3 c. beef broth
- 2 c. white wine
- 4 thick slices French bread
- 4 Tbsp. grated Parmesan cheese
- 4 Tbsp. grated Swiss cheese
Method
- In heavy pot, melt butter.
- Add onions and cook slowly, stirring occasionally, until golden.
- Sprinkle on the flour and stir for a few minutes, seasoning with salt and pepper.
- Add broth and wine, stirring constantly.
- Bring to a boil.
- Lower the heat and let the soup simmer for 30 minutes, partly covered.
