Ingredients

  • 1/2 c. butter
  • 1/4 c. brown sugar
  • 1 egg, separated
  • 1 c. sifted flour
  • 1/2 c. chopped nuts
  • jelly

Method

  • Cream butter until soft.
  • Blend in sugar.
  • Add egg yolk, beating until light.
  • Blend in flour.
  • Roll dough into small balls. Dip in egg white and then roll in egg white and finally in chopped nuts.
  • Place ball on greased cookie sheet.
  • Make depression in center of each ball.
  • Bake 5 minutes in slow oven and press down center again.
  • Continue baking for about 15 minutes longer.
  • Cool slightly and fill centers with jelly.
  • Yields approximately 1 dozen cookies.
