Ingredients

  • 2 c. flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/4 c. shortening
  • 1/4 c. butter or margarine
  • 1 c. granulated sugar
  • 1 egg yolk
  • 1/2 c. sour cream or buttermilk
  • 1/2 tsp. vanilla
  • 1 egg white, beaten stiff

Method

  • Mix flour, soda and salt.
  • Cream shortening and butter. Gradually add sugar and cream well.
  • Add egg yolk and vanilla and beat until light and fluffy.
  • Add flour mixture, alternating with sour cream (or buttermilk), stirring until batter is smooth after each addition.
  • Fold in stiffly beaten egg whites.
  • Drop by rounded tablespoonfuls 3 inches apart on lightly greased baking sheet.
  • Flatten with granulated sugar, if desired.
