Ingredients
- 1 whole fryer, cut up
- 3/4 c. buttermilk
- 1 1/2 c. flour
- 3 tsp. salt
- 1/2 tsp. pepper
- 2 tsp. paprika
- dash of cayenne
- 3 tsp. dried minced onions
- 1 stick butter or oleo
Method
- Mix flour, salt, pepper, paprika, cayenne and onions together. Dip chicken pieces in buttermilk and then into flour mixture. Melt butter in shallow baking pan in a 400° oven.
- Place chicken pieces in pan, turning to coat in butter (skin side down in single layer). Bake at 400° for 30 minutes. Turn chicken and bake 30 minutes longer or until tender.
