Ingredients

  • 6 or 7 potatoes
  • 1 (8 oz.) pkg. Philadelphia cream cheese, softened
  • 1 c. dairy sour cream
  • salt to taste
  • 1/4 c. minced green onion
  • paprika
  • butter or margarine

Method

  • Cook potatoes in boiling salted water until tender.
  • Drain. Mash potatoes in large bowl of electric mixer; add cream cheese, sour cream and salt.
  • Beat at high speed until smooth and light. Stir in chopped green onion.
  • Spoon into a lightly greased baking dish; sprinkle with paprika and dot with butter or margarine. Bake in 350° oven for 30 minutes or until lightly golden brown and heated through.
  • This can be made ahead and refrigerated overnight before baking.
