Ingredients

  • 1 pkg. (6 ounce.) dry apricots (1 1/3 c.)
  • 1/2 c. hard butter
  • 1/2 c. granulated sugar
  • 2 1/2 c. Bisquick baking mix
  • 2 c. packed brown sugar
  • 4 Large eggs, beaten
  • 2/3 c. Bisquick baking mix
  • 1 teaspoon vanilla
  • 1 c. minced nuts
  • Powdered sugar

Method

  • Place apricots in 2 qt saucepan; add in sufficient water to cover.
  • Simmer uncovered 10 min; drain.
  • Cold; chop and reserve.
  • Heat oven to 350 degrees.
  • Cut butter into granulated sugar and 2 1/2 c. baking mix till crumbly.
  • Pat in ungreased jelly roll pan, 15 1/2 x 10 1/2 x 1 inch.
  • Bake 10 min.
  • Beat brown sugar and Large eggs.
  • Stir in apricots, 2/3 c. baking mix, the vanilla and nuts.
  • Spread over baked layer.
  • Bake 30 min longer; cold completely.
  • Cut into bars about 2 inch x 1 inch.
  • Roll in powdered sugar.
  • 75 cookies.
