Ingredients
- 1/2 gal. ice cream (vanilla or favorite flavor)
- 1 lb. flaked coconut
- 4 oz. peppermint candies
Method
- Crush peppermint candies in blender.
- Scoop out large, round balls of ice cream with dipper.
- Roll each in flaked coconut until completely covered.
- Place on serving dish and garnish with cracked peppermint candy.
- Insert a birthday candle into the center of each.
- Return to freezer until serving time.
- Serve with candles lit.
