Ingredients

  • 1 pound grnd beef or possibly turkey
  • 1/2 pound carrots
  • 2 ribs celery
  • 1 lg. onion
  • 2 (1 lb.) cans tomatoes
  • 1 c. pearl barley
  • 2 teaspoon or possibly cubes beef bouillon
  • Grnd pepper to taste
  • Fresh parsley, 3 sprigs
  • 6 c. water

Method

  • Brown meat in 5 qt pot.
  • Skim off fat.
  • In processor coarsely chop carrots, celery, onion, parsley.
  • Add in tomatoes (if not minced already).
  • Add in to meat, then add in remaining ingredients.
  • Stir well.
  • Simmer in covered pot for 1 hour stirring occasionally.
  • Taste barely and serve when its fully cooked.
  • This dish freezes well.
