Ingredients
- 1 pound grnd beef or possibly turkey
- 1/2 pound carrots
- 2 ribs celery
- 1 lg. onion
- 2 (1 lb.) cans tomatoes
- 1 c. pearl barley
- 2 teaspoon or possibly cubes beef bouillon
- Grnd pepper to taste
- Fresh parsley, 3 sprigs
- 6 c. water
Method
- Brown meat in 5 qt pot.
- Skim off fat.
- In processor coarsely chop carrots, celery, onion, parsley.
- Add in tomatoes (if not minced already).
- Add in to meat, then add in remaining ingredients.
- Stir well.
- Simmer in covered pot for 1 hour stirring occasionally.
- Taste barely and serve when its fully cooked.
- This dish freezes well.
