Ingredients
- 2 white fish fillets
- 1 chipotle chile
- 3 -4 tablespoons cilantro
- 1 lime
Method
- Chop chili and cilantro and mix with juice of 1/2 a lime.
- A small food processor works great for this.
- Marinade fish in mixture for several hours or over night in a zip-top bag in the fridge.
- Grill fish on high for 3 or 4 minutes per side.
- Serve with lime wedges from the other half of the lime.
