Ingredients

  • 1 package Hillshire Farm(R) Beef Smoked Sausage
  • 5/8 pound mini golden potatoes
  • 8 ounces whole baby carrots
  • 1 red bell pepper thinly sliced
  • 1/4 cup green peas
  • 1 tablespoon unsalted butter
  • 1 teaspoon freshly chopped thyme
  • 1 teaspoon freshly chopped parsley
  • kosher salt

Method

  • Boil water in a large pot. Cook the potatoes for 15 minutes, remove and slice in half; set aside. In the same boiling water, cook the carrots for 5 minutes and drain. Heat a large skillet over medium-high. Heat skillet over medium-high heat and cook sausage 2 minutes, add the potatoes, carrots, peppers and peas. Continue to cook for 10 minutes and finish with butter. Season with the fresh herbs, salt and pepper.
