- 1 12 cups dry lentils
- 2 medium carrots, sliced
- 2 onions, diced
- 2 celery ribs, diced
- 1 large sweet potato, sliced
- 2 zucchini, quartered
- 1 (15 ounce) can garbanzo beans
- 2 (15 ounce) cans diced tomatoes
- 5 cups vegetable broth
- 2 tablespoons italian seasoning
- 2 garlic cloves, finely diced
Method
- add broth, diced tomatoes, lentils, seasoning and then everything else to at least a 5 quart crock pot.
- Cover and cook on low for 9-11 hours.
