Ingredients

  • 1-1/3 cup Brown Sugar, Packed
  • 1/2 cups Water
  • 1-1/2 teaspoon Vanilla Extract
  • 1/2 cups Canola Oil
  • 3/4 cups Spelt Flour
  • 2 Tablespoons Cornstarch
  • 3 cups Quick Oats
  • 3/4 teaspoons Baking Soda
  • 1/2 teaspoons Salt
  • 1/4 teaspoons Allspice
  • 1/2 teaspoons Cinnamon
  • 1/2 cups Sugar Reduced Craisins
  • 1 cup Raisins
  • 2 cups Bran Flakes Cereal
  • 1 Tablespoon Wheat Germ (optional)
  • 1 Tablespoon Chia Seeds (optional)
  • 1/3 cups Pecans, Chopped

Method

  • Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
  • In a mixing bowl or by hand, blend in the brown sugar, water, vanilla, and oil. Fold in the spelt flour, cornstarch, oats, baking soda, salt, allspice, and cinnamon. Fold in the raisins, cereal, wheat germ, chia seeds, and chopped pecans.
  • Take about 2 tablespoons worth of cookie dough and place them on the cookie sheet about 2 inches apart. Bake for about 10 minutes, place on cooling rack, and enjoy. The cookies may be slightly crisp and chewy on the inside.
