Ingredients

  • 8 oz. ground beef
  • 1 medium onion, chopped
  • 1/2 clove garlic, chopped
  • 1 small green chili pepper, chopped
  • 1 (21 oz.) can tomatoes
  • 1 (21 oz.) can chili con carne
  • 1 to 2 c. cooked pinto beans
  • 1/2 c. half and half
  • shredded lettuce
  • 1 large pkg. corn chips
  • 1 c. shredded Cheddar cheese

Method

  • Brown ground beef with garlic in skillet, stirring until ground beef is crumbly; drain.
  • Add green chili pepper, tomatoes, chili con carne and beans.
  • Simmer for 30 minutes.
  • Stir in half and half.
  • Sprinkle with shredded lettuce, corn chips and cheese. Yields 6 to 8 servings.
