- 8 oz. ground beef
- 1 medium onion, chopped
- 1/2 clove garlic, chopped
- 1 small green chili pepper, chopped
- 1 (21 oz.) can tomatoes
- 1 (21 oz.) can chili con carne
- 1 to 2 c. cooked pinto beans
- 1/2 c. half and half
- shredded lettuce
- 1 large pkg. corn chips
- 1 c. shredded Cheddar cheese
Method
- Brown ground beef with garlic in skillet, stirring until ground beef is crumbly; drain.
- Add green chili pepper, tomatoes, chili con carne and beans.
- Simmer for 30 minutes.
- Stir in half and half.
- Sprinkle with shredded lettuce, corn chips and cheese. Yields 6 to 8 servings.
