Ingredients
- 3/4 c. uncooked regular long grain rice
- 3/4 c. chopped onion
- 1 can chicken broth
- 4 skinless, boneless chicken breasts
- 2 c. frozen vegetable combination
Method
- In a skillet over medium heat in 1 tablespoon hot margarine, cook rice and onion until rice is lightly browned.
- Stir constantly.
- Stir in broth.
- Heat to boiling.
- Add chicken.
- Reduce heat to medium.
- Cover.
- Cook 5 minutes.
- Add vegetables.
- Cover; cook 15 minutes or until chicken is no longer pink and rice is tender, stirring rice mixture occasionally.
- Garnish chicken with lemon slice with paprika, if desired.
