Ingredients

  • 3/4 c. uncooked regular long grain rice
  • 3/4 c. chopped onion
  • 1 can chicken broth
  • 4 skinless, boneless chicken breasts
  • 2 c. frozen vegetable combination

Method

  • In a skillet over medium heat in 1 tablespoon hot margarine, cook rice and onion until rice is lightly browned.
  • Stir constantly.
  • Stir in broth.
  • Heat to boiling.
  • Add chicken.
  • Reduce heat to medium.
  • Cover.
  • Cook 5 minutes.
  • Add vegetables.
  • Cover; cook 15 minutes or until chicken is no longer pink and rice is tender, stirring rice mixture occasionally.
  • Garnish chicken with lemon slice with paprika, if desired.
