Ingredients
- 1 lb boneless skinless chicken breast
- 2 tablespoons vegetable oil
- 1 12 cups barbecue sauce
- 1 cup water
- 11 ounces whole kernel corn, drained
- 1 small green pepper, chopped
- 2 cups Minute Rice, uncooked
Method
- Brown chicken in hot oil in large skillet on medium-high heat.
- Stir in barbecue sauce, water, corn and pepper.
- Bring to a boil.
- Reduce heat, cover and simmer for five minutes.
- Stir in rice, cover and remove from heat.
- Let stand for five minutes.
