Ingredients

  • 1 lb boneless skinless chicken breast
  • 2 tablespoons vegetable oil
  • 1 12 cups barbecue sauce
  • 1 cup water
  • 11 ounces whole kernel corn, drained
  • 1 small green pepper, chopped
  • 2 cups Minute Rice, uncooked

Method

  • Brown chicken in hot oil in large skillet on medium-high heat.
  • Stir in barbecue sauce, water, corn and pepper.
  • Bring to a boil.
  • Reduce heat, cover and simmer for five minutes.
  • Stir in rice, cover and remove from heat.
  • Let stand for five minutes.
