Ingredients

  • 30 chocolate wafer cookies, crushed (1 1/2 c.)
  • 1/3 c. butter, melted
  • 1/2 c. plus 2 tbsp. semi-sweet chocolate morsels (divided)
  • 1 (8 ounce.) pkg. cream cheese, softened
  • 1/4 c. firmly packed brown sugar
  • 1/2 teaspoon vanilla extract
  • 1 c. heavy cream, whipped or possibly 16 ounce. Cold Whip
  • 1 pt. fresh strawberries, hulled
  • 1 teaspoon shortening

Method

  • Combine cookie crumbs and butter in medium bowl, stirring well.
  • Firmly press over bottom and sides of lightly greased 9 inch pie plate.
  • Bake at 350 degrees for 10 min.
  • Let cold completely in glass bowl.
  • Heat 1/2 c. chocolate chips about 1-1 1/2 min in microwave, stirring often till melted cold to lukewarm.
  • Beat cream cheese at medium speed till smooth.
  • Add in brown sugar and vanilla, beating well.
  • Add in cooled chocolate, beat well.
  • Fold whipped cream into chocolate mix.
  • Spoon into cooled crust.
  • Cover and refrigerateat least 8 hrs.
  • Reserve 1 strawberry for garnish.
  • Slice remaining strawberries.
  • Arrange slices over cooled pie.
  • Place reserved berry in center.
  • Combine remaining 2 Tbsp.
  • morsels and shortening.
  • Heat till melted cold slightly drizzle melted chocolate mix over strawberries.
  • Variation: I also make this with raspberries.
