- 30 chocolate wafer cookies, crushed (1 1/2 c.)
- 1/3 c. butter, melted
- 1/2 c. plus 2 tbsp. semi-sweet chocolate morsels (divided)
- 1 (8 ounce.) pkg. cream cheese, softened
- 1/4 c. firmly packed brown sugar
- 1/2 teaspoon vanilla extract
- 1 c. heavy cream, whipped or possibly 16 ounce. Cold Whip
- 1 pt. fresh strawberries, hulled
- 1 teaspoon shortening
Method
- Combine cookie crumbs and butter in medium bowl, stirring well.
- Firmly press over bottom and sides of lightly greased 9 inch pie plate.
- Bake at 350 degrees for 10 min.
- Let cold completely in glass bowl.
- Heat 1/2 c. chocolate chips about 1-1 1/2 min in microwave, stirring often till melted cold to lukewarm.
- Beat cream cheese at medium speed till smooth.
- Add in brown sugar and vanilla, beating well.
- Add in cooled chocolate, beat well.
- Fold whipped cream into chocolate mix.
- Spoon into cooled crust.
- Cover and refrigerateat least 8 hrs.
- Reserve 1 strawberry for garnish.
- Slice remaining strawberries.
- Arrange slices over cooled pie.
- Place reserved berry in center.
- Combine remaining 2 Tbsp.
- morsels and shortening.
- Heat till melted cold slightly drizzle melted chocolate mix over strawberries.
- Variation: I also make this with raspberries.
