Ingredients

  • 2 eggs, beaten
  • 1/2 c. tomato juice
  • 1/2 tsp. oregano
  • 1 clove garlic, minced
  • 8 thinly sliced deli ham
  • 1 1/2 c. shredded Mozzarella cheese
  • 3 slices Mozzarella cheese, cut into wedges
  • 3/4 c. soft bread crumbs
  • 2 Tbsp. chopped parsley
  • 1/4 tsp. each: salt and pepper
  • 2 lb. ground beef

Method

  • Combine first 9 ingredients in bowl and mix well.
  • Pat into rectangle on waxed paper.
  • Layer ham and shredded cheese on ground beef.
  • Roll like jelly roll, sealing edges and ends.
  • Place seam side down in baking dish (13 x 9-inch).
  • Bake at 350° for 1 hour and 15 minutes.
  • Top with cheese wedges.
  • Bake until cheese is melted.
  • Serves 8.
