- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 1/2 c. celery
- 1 clove garlic, minced
- 3 Tbsp. oil
- 2 c. tomatoes
- 1 (8 oz.) can tomato paste
- 1 1/2 tsp. salt
- 1 Tbsp. sugar
- 1/2 tsp. chili powder
- 1 Tbsp. Worcestershire sauce
- dash of Texas Pete
- 1 tsp. cornstarch or plain flour
- 1 lb. shrimp, cleaned and deveined
Method
- Cook onions, green peppers, celery and garlic in hot oil until tender.
- Add tomatoes, paste and seasonings; simmer 45 minutes. Mix cornstarch with 2 teaspoons cold water; stir into sauce.
- Add shrimp and simmer 10 minutes more.
- Spoon over cooked rice. Yield: 8 servings.
