Ingredients

  • 2 lb. headless raw shrimp
  • 1 large onion, chopped
  • 2 Tbsp. cooking oil
  • 1 clove garlic, chopped
  • 2 Tbsp. green pepper, chopped
  • 1 Tbsp. flour
  • 1 (8 oz.) can tomato sauce
  • 1 1/2 to 2 c. water
  • 2 Tbsp. parsley, chopped
  • 1 pinch of thyme
  • 1/2 tsp. black pepper
  • 1 tsp. salt
  • dash of cayenne pepper

Method

  • Peel, devein and wash shrimp.
  • Saute onion in oil (about 6 to 8 minutes).
  • Stir in garlic and green pepper.
  • Saute for 2 minutes.
  • Blend in flour; add tomato sauce and simmer 5 minutes. Stir in water, thyme, parsley, shrimp, salt and pepper.
  • Cover and simmer 30 minutes.
  • Serve over cooked rice.
