- 1/4 c. chopped onion
- 1/2 green pepper, chopped
- 2 Tbsp. butter
- 3 Tbsp. cornstarch
- 1/8 tsp. pepper
- 1/2 tsp. salt
- 1/2 tsp. basil
- 1 lb. 12 oz. tomatoes, undrained
- 1/2 tsp. paprika
- 1/2 tsp. chili powder
- 1 clove garlic, crushed
- 12 oz. cooked shrimp
Method
- In pan, cook onion and green pepper in butter until soft. Stir in remaining ingredients, mixing well. Bring to a boil. Cover and allow to simmer for 5 to 10 minutes.
- (If you're using uncooked shrimp, cook 10 to 15 minutes.)
- Stir occasionally. Serve over rice. Serves 4 to 6.
