Ingredients
- 1 lb. lean mild sausage
- 3 (4 oz.) cans green chilies, chopped
- 1 lb. Cheddar cheese, grated
- 1 1/4 lb. Monterey Jack cheese, grated
- 9 eggs, beaten
- 1 c. milk
- 2 Tbsp. flour
Method
- Brown sausage and drain between paper towels.
- Layer sausage on bottom of casserole. Put cheeses on top, then the green chilies.
- Combine eggs, milk and flour until well blended. Pour liquid over the mixture.
- Decorate top with strips of green chilies.
- Sprinkle with paprika and bake at 350° for 40 to 45 minutes or until firm.
