Ingredients

  • 1 lb. lean mild sausage
  • 3 (4 oz.) cans green chilies, chopped
  • 1 lb. Cheddar cheese, grated
  • 1 1/4 lb. Monterey Jack cheese, grated
  • 9 eggs, beaten
  • 1 c. milk
  • 2 Tbsp. flour

Method

  • Brown sausage and drain between paper towels.
  • Layer sausage on bottom of casserole. Put cheeses on top, then the green chilies.
  • Combine eggs, milk and flour until well blended. Pour liquid over the mixture.
  • Decorate top with strips of green chilies.
  • Sprinkle with paprika and bake at 350° for 40 to 45 minutes or until firm.
