Ingredients

  • 2 cans LeSueur peas
  • 2 cans Shoe Peg corn
  • 1 small jar chopped pimentos
  • 5 fresh onions with tops, chopped or 1/2 chopped onion
  • 6 celery stalks, chopped
  • 1 bell pepper, chopped
  • 3/4 c. white vinegar
  • 1/2 c. oil
  • 1 c. sugar
  • 1 Tbsp. water
  • 1 tsp. black pepper
  • 1 tsp. salt

Method

  • In large container, toss together peas, Shoe Peg corn, pimentos, onion, celery and bell pepper.
  • Set aside.
  • In small saucepan, mix vinegar, oil, sugar, water, black pepper and salt. Heat marinade until sugar is dissolved.
  • Cool and pour over vegetables.
