- 2 cans LeSueur peas
- 2 cans Shoe Peg corn
- 1 small jar chopped pimentos
- 5 fresh onions with tops, chopped or 1/2 chopped onion
- 6 celery stalks, chopped
- 1 bell pepper, chopped
- 3/4 c. white vinegar
- 1/2 c. oil
- 1 c. sugar
- 1 Tbsp. water
- 1 tsp. black pepper
- 1 tsp. salt
Method
- In large container, toss together peas, Shoe Peg corn, pimentos, onion, celery and bell pepper.
- Set aside.
- In small saucepan, mix vinegar, oil, sugar, water, black pepper and salt. Heat marinade until sugar is dissolved.
- Cool and pour over vegetables.
