Ingredients

  • 1 small head lettuce, shredded, or in small pieces
  • 3/4 c. chopped celery
  • 1/3 c. chopped red pepper
  • 1/3 c. chopped green pepper
  • 8 canned and sliced water chestnuts
  • 1/3 c. carrot shreds
  • 1 (10 oz.) pkg. frozen peas (uncooked)
  • 2 c. mayonnaise
  • 1 Tbsp. sugar
  • 1/2 lb. bacon, cooked and crumbled
  • 1/3 c. grated Romano cheese
  • 1/3 c. grated Parmesan cheese
  • 1 hard-cooked egg
  • 1 tomato, cut into wedges

Method

  • Layer the first 7 ingredients in a large salad bowl in order given above.
  • Combine mayonnaise and sugar; spread over salad vegetables to cover.
  • Sprinkle with cheeses.
  • Cover with plastic wrap; chill overnight or at least 8 hours.
  • Garnish before serving with egg, bacon and tomato.
  • Do not toss.
  • Serves 6 to 8.
