- 1 small head lettuce, shredded, or in small pieces
- 3/4 c. chopped celery
- 1/3 c. chopped red pepper
- 1/3 c. chopped green pepper
- 8 canned and sliced water chestnuts
- 1/3 c. carrot shreds
- 1 (10 oz.) pkg. frozen peas (uncooked)
- 2 c. mayonnaise
- 1 Tbsp. sugar
- 1/2 lb. bacon, cooked and crumbled
- 1/3 c. grated Romano cheese
- 1/3 c. grated Parmesan cheese
- 1 hard-cooked egg
- 1 tomato, cut into wedges
Method
- Layer the first 7 ingredients in a large salad bowl in order given above.
- Combine mayonnaise and sugar; spread over salad vegetables to cover.
- Sprinkle with cheeses.
- Cover with plastic wrap; chill overnight or at least 8 hours.
- Garnish before serving with egg, bacon and tomato.
- Do not toss.
- Serves 6 to 8.
